If you want to really support a Spoonie helping them with meals is a really great way to go. So get them a meal or two either through takeout or grocery delivery from their local grocery store.

Roomba

My grandmother gave me one and it has made life so much easier. From bed I can trigger it and it can vacuum any room of the house. They are a pricey gift. I’ve linked a roomba for less than $300.

Minimalist Spoonie

Marble or wood pill box

Help them get organized with a sleek-modern pill box. They can hide those ugly (and very unminimalist) pill bottles but still have their pills out where they’ll remember to take them.

Charitable Donation In Their Name

The whole point of being a minimalist is to have fewer things. Which makes holiday shopping for them very difficult. A charitable donation in their name is a great way to go. Consider donating to Disability Rights Education & Defense Fund or Humanity & Inclusion.
